Looking for the ultimate date night in Melbourne? Perched 25 floors above the CBD, freshly refurbished and cooking over live charcoal, Langlands Restaurant & Bar at Hyatt Centric Melbourne served us one of the most satisfying dinners of the year: a showstopping hibachi ribeye, a table full of $10 snacks and cocktails, and a sunset over the city we won't forget in a hurry.

Hotel restaurants in Melbourne carry a certain reputation: safe menus, beige rooms, a captive audience. Langlands throws all of that out the window, quite literally, because the first thing you notice when the lift doors open on Level 25 is Melbourne itself, laid out in every direction through floor-to-ceiling glass. The second thing you notice is the savvy and imaginative cooking of the food.

A Melbourne Grill Set Above the City

langlands view

Langlands sits just 500 metres from Southern Cross Station on the 25th floor of Hyatt Centric Melbourne, which makes it one of the easiest high-altitude dinners in town to reach by train or tram. The 137-seat dining room has just emerged from a gorgeous refurbishment. The original space was conceptualised by Hecker Guthrie and has now been reimagined by NUMI Collective, drawing on the character of Melbourne's streets and the work of local artists. The result feels warm, confident and grown-up, with a genuine touch of class, without ever tipping into stuffiness.

And then there are the views. The dining room frames the CBD skyline, Southbank and the Yarra River in sweeping 360-degree panoramas, while the private dining spaces stretch all the way to Port Phillip Bay and the Dandenong Ranges on a clear evening. We timed our arrival for sunset and watched the city glow gold, then sparkle, as the night rolled in. Book for golden hour. Trust us.

Just as impressive was the service. From the moment we sat down, the team were warm, knowledgeable and attentive without hovering, guiding us through the menu and pacing the meal beautifully. The standard of both the food and the service was high across the entire evening.

We Started with the New $10 Snacks & Sips

To celebrate the refurbishment, Langlands has launched a Snacks & Sips menu where every drink and every bite is just $10. It runs until 7 November 2026, from 5.30pm. For a venue with views like these, it is one of the best-value deals in the CBD right now, and we made the most of it.

Mini Aviation & Tokyoside Cocktails

The Mini Aviation is a pretty, perfectly balanced classic in miniature, with Allie Lane Gin, crème de violette and a maraschino cherry lending a gentle floral lift. The Tokyoside was the surprise of the night: gin infused with smoked Billy tea, shaken with Midori and green tea syrup into a vivid green drink that is smoky, grassy, lightly sweet and great fun. Sipping either one with the sun setting over the city is about as good as a $10 cocktail gets.

Kare-Kare Croquette

langlands croquettes

A clever nod to the Filipino classic, this croquette is packed with slow-cooked beef cheek and finished with peanut and annatto. It shatters on the outside to reveal a rich, nutty, deeply savoury centre. Dairy free, and dangerously moreish.

Lamb Bò Lá Lốt

langlands three snacks

Vietnamese-style lamb wrapped in betel leaf and kissed by the charcoal, then served with a punchy nam jim talay, the Thai dressing of chilli, lime and garlic. The leaf turns smoky and aromatic on the grill, and the dressing cuts through with a hit of heat and zing. Fragrant, smoky and addictive.

Golden Plains Pork

Golden Plains pork glazed in tamarind and topped with fried shallot and chilli: sticky, tangy, a little bit fiery and deeply satisfying. Gluten free and dairy free, and one of our favourite bites of the night.

The rest of the Snacks & Sips list is just as tempting, with rock oysters topped with Yarra Valley caviar and sweet ginger, a summery stracciatella with shishito peppers and heirloom tomato, a Yuzu Spritz, NV Coeur des Sages Blanc de Blancs Bubbles, and the alcohol-free Jasmine Longing. Our tip: spend at least $50 on a lineup of five and you have a perfect sunset session, or the ideal opening act before moving on to the grill, exactly as we did.

Then Came the Hibachi Grill

The heart of Langlands is its flame-led hibachi charcoal grill. The menu is compact, seasonal and built around the best Victorian and Australian produce, with generous plates designed to share. Bold, flavour-driven and completely fuss-free, it is the kind of cooking that lets great ingredients and live fire do the talking. Every dish we tried was delicious and full of flavour.

Black Angus Ribeye, 150-Day Grain Fed MB2 (600g)

langlands rib eye

An absolute showstopper. This 600g Black Angus ribeye, grain fed for 150 days with a marble score of 2, arrives with a deep, smoky charcoal crust giving way to a juicy, blushing-pink centre. Ribeye is the steak lover's cut for good reason, with its ribbon of fat melting into the meat and carrying all that hibachi smoke with it. Alongside came a rich, glossy cognac and green peppercorn sauce with just the right warming bite. Built for sharing and cooked with real precision, this is one of the best steaks we have had in the Melbourne CBD this year.

Kimchi Rice

A must-order. Smoky bacon, ginger, green onion and a runny egg folded through funky, tangy kimchi. It is pure comfort with a kick, the perfect partner for the ribeye, and the dish we kept going back to long after we swore we were full.

Kipfler Potatoes

langlands potatoes

Roasted in beef tallow until golden and crisp at the edges and fluffy within, then tossed with capers, shallot and parsley. Rich, salty, bright and utterly irresistible. Gluten free, and a must with the steak. We think all kitchens should cook with beef tallow.

To Drink: La Boca Malbec

langlands wine

We matched the ribeye with a glass of La Boca Malbec from Argentina, and it was an inspired pairing. Plush dark fruit, soft spice and smooth tannins stood up beautifully to the charcoal and the peppercorn sauce. Argentina knows a thing or two about steak and Malbec, and Langlands clearly does too.

Next Time

We already have our return order sorted: the charcoal-grilled Hamachi Kingfish Collars (500g, $48) with nam jim talay, fried garlic and lime, the Southern Ranges Porterhouse (pasture fed, 300g, $68) with Café de Paris butter, and the loaded Langlands Fries with pickled daikon, aioli and parmesan.

The Verdict

langlands interior

Langlands has pulled off something rare: a hotel restaurant with a genuine culinary identity. The charcoal cooking is assured, the flavours are bold and borderless, the service is polished and warm, the refurbished room has real personality, and the views are among the very best in Melbourne. Sunset cocktails, a generous grill and that view make it a perfect choice for your next date night or after-work catch-up. Add a $10 Snacks & Sips menu that makes a skyline session ridiculously affordable, and you have one of the most exciting reasons to head up to Level 25 this spring. Go before 7 November, and order the ribeye.
