Foodie legend Adam Richman launches new Castello® Burger Blue

The nation’s foodies are in for a new taste experience as Castello® cheese introduces Burger Blue to Australia. The first ever conveniently sliced blue cheese, Burger Blue’s texture, flavour, size and shape have been created specifically to be enjoyed on burgers. The World Loves Melbourne was invited to the launch of Castello Burger Blue at Easey's in Collingwood. Foodie legend Adam Richman launched Castello Burger Blue and had some things to say about all things burger! (see below).

Made to a traditional blue cheese recipe, Burger Blue has a full flavour and a bold bite tempered by rich, buttery notes on the finish. The texture is smooth and even, with rich veins of blue mould throughout. The Burger Blue recipe was specially selected to deliver a balanced blue cheese flavour when combined with other ingredients in a burger – such as meat and sauces – and to keep its shape when melted on a patty.

Food’, ‘Man Finds Food’ and ‘Secret Eats with Adam Richman’, in Australia for the first time to celebrate the launch of the new Castello® Burger Blue, says: “I love blue cheese on a burger! It has such a sharp taste, it's a really great balance to the richness of a burger patty. Without question, I would definitely serve it with somewhat thickly cut black pepper-crusted bacon, sautéed onions and mushrooms and some kind of plum tomato or oven-dried tomato. And because burger cheese, but with more of a flavor punch than perhaps more traditional cheeses, you don't need to use a lot to get great flavor in every bite!” At the launch the media/bloggers were encouraged to "build your own" burger with the Castello Burger Blue from the station - just like you would at home!

Cooking suggestion
When serving Burger Blue on a burger, it is recommended to melt a slice slightly on top of the burger patty while it’s still on the grill. This will bring out the creamy texture and rich flavours in the cheese.

1. Adam’s predictions for burger trends in 2017
For me, I think we’ll see different types of artisanal burgers: no buns, new proteins being used and greater strides being made in plant-based burgers in terms of creating a more authentic beef look smell and flavor.

2. Adam’s thoughts on what makes a great burger
What makes a really great burger for me is a perfect balance between the burger and its toppings and really good quality bread. Above all, the grind of the meat must be even, the burger can't be packed too tightly so that it still has juiciness and lightness to it. It should be good quality beef and seasoned with a bit of restraint; just salt and pepper.

3. Adam’s must-have ingredients for making the ultimate burger at home
My must-have ingredients for making the ultimate burger at home include:
• Cold: ice cold FRESH veggies for toppings
• Hot: sautéed onions, sautéed mushrooms, good quality, freshly ordered bacon, really good beef with a ratio of roughly 80% meat to 20% percent fat
• Condiments: Kosher salt, fresh ground black pepper
• Bread: lastly comes a really good bread that works flavor wise with the burger and doesn't feel too heavy or starchy. I prefer softer, more pill Louis, chewy buns, potato rolls, Portuguese bread and so on.


4. Adam’s insights on what it is about burgers that has made them so popular/timeless
Burgers are portable, convenient and familiar. Plus, because of the simplicity of what makes a hamburger a hamburger, you see many brilliant variations on the theme. People can use their favorite protein, from chicken, to turkey, to lamb and even salmon to make the patty. Condiments and even different types of bread are forever changing.
We can grab burgers on the go from the drive-through, or sit down and eat them with a fine wine at a Gastro pub. They are both highbrow and lowbrow, capable of being fun, greasy junk food, or a meal to remember.

5. Adam’s thoughts on the best condiments or ingredients to go with blue cheese on a burger
I love blue cheese on a burger! Without question I would definitely serve it with somewhat thickly cut black pepper-crusted bacon, sautéed onions and mushrooms and some kind of plum tomato or oven-dried tomato.

6. Adam’s insights on the taste experience of blue cheese on a burger
Burgers, and beef in general are blue cheese’s best friend! They both have an incredible earthiness that makes them natural partners, and meat and cheese have always gone together to create that really decadent, rich mouth feel. Plus, because blue cheese has such a sharp taste, it's a really great balance to the richness of a burger patty. Also, many people over do the toppings and go to far. They add too many things and smother the burger to the point that you lose the beef. However because blue cheese has the creaminess you seek in a burger cheese, but with more of a flavor punch than perhaps more traditional cheeses, you don't need to use a lot to get great flavor in every bite, meaning you don't overwhelm and smother the burger itself.
